

My favorite dish is rice and cassava because it has all my favorite ingredients in it reminds me of my mother. When I was in Guinea before coming to the United States, we cooked this dish once every week! Now that I am here, I make this on my own and would like to share the recipe with you all.
List of ingredients we use to cook Cassava leaf
1. Pounded Cassava leaf
2. Peanut Butter
3. Onions
4. Peppers
5. Okra
6. Palm oil
7. Fish
8. Salt
Steps
We start by putting the pounded cassava in a bowl and adding water, the amount of water depends on the number of cassava leaves you have (more leaves require more water). Add the peanut butter and place it on the stove to boil until they are mixed. Next, cut the onions and blend them, then add them to the cassava bowl. After sitting for about 20 minutes, add the fish, salt, and palm oil and leave it to cook. When the majority of the water has boiled off, blend the okra and add it to the sauce. Mix everything until you aren’t able to see any remaining okra. Reduce the heat to low and simmer for 10 minutes.
